Cauliflower Piccata

One of my favorite dishes is chicken piccata but I've been trying to eat more vegetables lately and a little less meat. So I wanted to find a recipe that incorporated Piccata sauce but using a vegetable. I found a really great recipe using cauliflower. I decided to give it a try. It's pretty simple I purchased a nice organic large head of cauliflower and I sliced it in to thick slabs. I was able to get about three slabs out of the head of cauliflower. I took out a cookie sheet and I put parchment paper on it and I drizzled the cauliflower with some olive oil and salt and pepper. I bake it in the oven on 400 degrees for about 20 minutes.
