Fresh Tomato and Parsley Sunday Sauce

I love fresh tomatoes especially in the Summer. They are so juicy and sweet. Being Italian, Sunday sauce is almost always made. I like to keep it simple and quick sometimes with an easy fresh sauce. It can be whipped up in under 30 minutes and tastes delicious with grated parm cheese! Here is the recipe. 

 

6-8 Vine Ripe Organic Tomatoes (firm) Large Chopped 

Olive Oil 

1 lb Gemelli Pasta 

1/2 cup Chopped Fresh Parsley

Pinch of Salt

 

In a saute pan heat 2 tbsp olive oil add chopped tomatoes and salt. Saute over medium heat for 15 minutes stirring to prevent sticking. Lower heat to low and cook 10 minutes until soft and bubbling. Add Parsley and stir gently. Stir in cooked pasta and drizzle with a touch more olive oil. Serve hot with grated parm cheese.
