Blueberry Crepes

I have been in the mood for crepes in the morning so I decided today was the day. This recipe is so simple and quick.

Ingredients For Crepes

1 Cup Flour

1/4 tsp Salt

4 Eggs

1 Tbsp Sugar

1 1/2 Cups Almond Milk or Regular Milk

3 Tbsp Melted Butter

Whisk all ingredients in a bowl until smooth. Do not over mix. In a heated flat nonstick pan ladle a small amount in pant until pan is covered in a thin layer. Let cook on low heat until lifts from sides of pan. Flip over to cook other side. Remove from pan and continue until mixture is finished. Makes 15-18 small crepes. Add berry filling. Sprinkle with powdered sugar and grated lemon.

Ingredients For Berries

1 Cup Blueberries

2 Tbsp Grated Lemon Peel

1/8 Cup Lemon Juice

3Tbsp Granulated Sugar

1 Tbsp Butter

Mix berries, grated lemon, lemon juice and granulated sugar. Melt butter in pan, add berries and let cook down on medium heat until berries burst and juices thicken.
