Cauliflower Piccata


One of my favorite dishes is chicken piccata but I've been trying to eat more vegetables lately and a little less meat. So I wanted to find a recipe that incorporated Piccata sauce but using a vegetable. I found a really great recipe using cauliflower. I decided to give it a try.

It's pretty simple I purchased a nice organic large head of cauliflower and I sliced it in to thick slabs. I was able to get about three slabs out of the head of cauliflower. I took out a cookie sheet and I put parchment paper on it and I drizzled the cauliflower with some olive oil and salt and pepper. I bake it in the oven on 400 degrees for about 20 minutes. Half way through I flipped it so each side would get brown and crispy.

While it was in the oven I made the sauce. The Piccata sauce is simple it's the same exact type of you would make for chicken. I started with a little bit of butter about a tablespoon and I let that melt. I added 1 small chopped shallot. I let that sauté until it was soft. Then I added a quarter cup of white wine, a quarter cup of vegetable broth, and 1/8 cup of lemon juice. I let this reduced to half and then I added capers. Once the sauce was finished and the cauliflower was also complete I drizzled the sauce over the cauliflower.

It came out absolutely delicious the cauliflower was tender and soft but still a little bit crispy. The Piccata sauce tasted just like the chicken piccata I am use to. One suggestion I have is if you want to get a little bit more of the Piccata feel to it, I may have slightly dusted the cauliflower with flour. I served it with some sautéed kale and couscous on the side.
