One of the easiest recipes we love to make is kale soup. It is so tasty, full of vitamins and nutrients especially in the winter. We add potato to give it a little creaminess and texture. Savor it the day you make it or freeze it for a quick night dinner.
2 Bunches of Organic Kale cleaned and large chopped
6 White Potatoes Peeled and Cubed
2 Organic Low Sodium Chicken or Vegetable Broth (32 oz Each)
1 Small Shallot Chopped
3 Tbsp Olive Oil
1/2 Tsp Hot Pepper Seeds
Boil Potatoes until soft, remove from pot and set aside. Saute shallots in 1 tbsp olive oil until lightly golden. Add kale and let cook down on medium low heat. Pour in chicken broth and let come to a boil then add potatoes, let cook until potatoes are mixed in. Stir in hot pepper seeds and remaining olive oil. Serve with a sprinkle of cheese.
