Homemade Potato Skins for Game Day
I love good game day apps, but also like to make them a little bit cleaner. Using fresh ingredients and making them myself is the way to go. Potato skins are one of my faves. The crispy edges and gooey cheese is all so delicious. I made these traditional with chives, cheddar cheese and bacon and added the toppings on the side.
Here is how to do it!
1 large Bag Yukon Gold Potatoes
1 Package maple smoked bacon
3/4 cup chives shopped
1/2 cup black olives chopped
3 cups shredded cheddar cheese
1 Avocado chopped
1 cup sour cream
2 small tomatoes chopped
1 Large bag Yukon Gold small potatoes sliced in half, bake for 25 minutes on 400 degrees until inside is removeable. Scrape out and save potato for mash another day.
While they are cooking place bacon on a sheet pan with foil and crisp up in the oven
Remove bacon and potatoes from oven
Place hollowed out potato skins on a baking sheet and drizzle with olive oil, bake on 425 until edges turn golden brown.
Break up bacon to crumble on top
Add shredded cheddar cheese, crispy bacon, 1/4 cup chopped chives (save the rest for topping) Bake until cheese is melted
Remove from oven and place on decorative plate with chives, olives, avocado, sour cream. and tomatoes on the side for optional toppings.
