Super Moist Zucchini Bread
I had a bunch of zucchini's sitting in my fridge and needed a way to use up about 4 of the. I love any type of bread so it just made sense to make a delicious and super moist zucchini bread. You will want to make this over and over again.
2 cups flour
¾ teaspoon baking powder
¾ teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon kosher salt
1 cup light (213 g) brown sugar
¾ cup sunflower seed oil
1 teaspoon vanilla extract
2 eggs, lightly beaten
3 cups grated zucchini, squeeze out some of the juice and discard
Mix wet ingredients first, add zucchini then add dry ingredients. Grease a loaf pan and bake on 350 F for about an hour or until a toothpick comes out clean. Slice warm and enjoy!
