Why You Need More Arugula in Your Life
One of my favorite lunches is an arugula salad with chickpeas (hummus), cherry tomatoes, cucumbers, and sometimes a little cous cous, orzo or quinoa. I switch it up based on what I have. I usually dress it with a lemon dijon vinaigrette that I make.
Arugula is a mood booster, high in vitamins that cleanse the blood and detoxify the system. It’s high in potassium that improves cardiovascular health and vitamin K for bone health. The best is it is surprisingly high in Vitamin C too which helps produce collagen and fights free radicals. This is how you do beauty from the inside out.
